Minimum specs on computer to add video

This has been tossed around a bit in a few other discussions but I wanted to revisit it again. What would be the minimum... no... the recommended specs for a computer or laptop to add video to next years display? I'm thinking about all the good deals for black Friday on desktops and laptops so I'm trying to get myself ready.

For example, Core Duo or just will a celeron work just fine.
2 Gig memory, 3 Gigs, 4Gigs?
Video, single card with two ports, or two cards?
Laptop or desktop?
