When placing your snubbers are you guys having the best luck plugging them the end of the lines or before the lights?

According to what I have read here, both are used.

Mine work either way depending on where they are easier to put.

I'm not sure I even know what a snubber is or why I would use one. I am pretty sure I don't have any in my display now - should I have them?

Some AC controllers don't take well to some LED strings (especially small ones).  The result is that the triac does not fully turn off with each AC cycle, which results in the LED string not fully turning off.  A snubber is just a resistor that gives the triac enough of a resistive load that it fully turns off.  If you don't have LED strings not quite turning off, you don't need them.  As I recall, Gen-3 controllers have them built in.

All of my lights are RGBs so that explains why I wouldn't have seen a need for a snubber, I guess!
