There have been some issues reported with the dimming function not working with certain LEDs. Most good LEDs seem to work. One fix sometimes suggested is to add a single regular bulb (i.e. like a night light) on the end of the LED string.

Also, some replacement LEDs (those made for replacing incandescents) may not be dimmable.

As far as how many you can put on a channel, this would be limited by the current draw on the string and the amperage limit on the channel. If the string draws .05 amps, then you could put up to 160 on an 8 amp channel.
