Can I set one controller by itself to DMX mode and operate it live with a standard stage lighting console? Straight in, no LOR software.

Generally yes.  What kind of controller?

You don't have to do anything to "set it" for DMX.  The only thing to set is the Unit ID which will also set the starting DMX channel.  See the back few pages of the manual to see that conversion chart.

I’d be using a LOR1602Wg3. 

I’ll check out the back of the manual. I guess I was thinking of the old residential controllers where I seem to remember jumpers to switch from LOR to DMX.

The only jumper change is to change the wiring standard.  You MAY need to do that depending on what is driving it.

Old residential controllers (e.g. CTB16PC) never had such jumpers. The original firmware didn't do DMX. To know if your controller speaks DMX, hook it up to a DMX signal and see if the status light goes solid. If it blinks, then the firmware may need updating.

Obviously, LOR controllers don't have XLR connectors that are used with DMX, but you can buy a XLR to LOR converter cable.

ANSI E1.11-2008, section 7.3 specifies the RJ45 pin-out for DMX, which is D+ on pin 1, D- on pin 2, and common (ground) on pin 7. Light-O-Rama, on the other hand, uses a proprietary pin-out that predates the ANSI specification by several years. It uses D+ on pin 4, D- on pin 5, and common (ground) on pin 6. The ANSI E1.11 standard does not allow a stage lighting console to use a RJ45.
